Want to up your fish game ( or your partner’s ) but don’t know where to start? Oeno Maris is now collaborating with our good friend, chef and fishmonger Michael Harrison to offer bespoke fish preparation classes, showcasing Oeno Maris’ top ingredients, in the comfort of your own home.
From the basics of preparing raw seafood to advanced fishmongery & beyond, there is a class for you (and the kids!). Even better - make a night of it & Chef Mike will prepare a meal for you with the fish you prepared. You won’t have to do any shopping, don’t need any special equipment & won’t have to clean up afterwards. We will even throw in a glass of wine at the start of the class to boost your confidence!
Mike is a chef & fishmonger with 20+ years in the hospitality industry, including many formative years working alongside our master Fishmonger, Daniel Murphy. His CV includes training at Top 50 Best / Michelin star restaurants like The French Laundry, work for Josh Niland at The Fish Butchery in Sydney & with some of the country’s best fishmongers, including Oeno Maris and The Sea, The Sea. He is a teacher at cooking schools across the UK, a private chef and a consultant to restaurants we love (i.e. Smoking Goat, Kiln, Som Saa, Kolae … ).

Beginners Fish Prep
In this class, you will learn the basics of oyster shucking, de-shelling prawns, filleting round fish, cleaning mussels & squid. There is an option to add on a full dinner preparation.

Advanced Fish Prep
Get a little more action with your knife in this course where you will learn advanced oyster shucking, prepping diver scallops, filleting lemon sole & butterflying a sea bass. You can add on full dinner preparation as well.

For the Kids
Entertain the kiddos by teaching them how to peel prawns, clean mussels & pick crab for some crab mayo on soldiers & seafood linguine!

Focus on Fruit de Mer
For the seafood lovers … this session focuses on prepping & eating Shellfish. We will go through oyster shucking, de-shelling prawns, cleaning mussels & clams, preparing octopus and lobster as well as cooking, picking and dressing crab!

Fish on the BBQ
This course is designed for the fire … you will be preparing diver scallops, butterflying tiger prawns, cleaning small round fish & filleting monk fish. Then the chef will cook this for you!

Lips to Tail Feast
A special treat for that cheffy foodie! In this session you will prepare a whole, large fish from start to finish, front to back, including filleting & breaking down the fillet - that tricky skinning, pin-boning. You will learn how to clean the head, bones & offal, slicing crudo, how to mince the flesh & make crispy fish skins!
