  • Prepare a whole, large fish from start to finish

  • Front to back, including filleting the fish

  • Breaking down of the fillet - that tricky skinning, pin-boning

  • You will learn how to clean the head, bones & offal

  • Slicing crudo

  • How to mince the flesh

  • Make crispy fish skins.
