Oeno Maris Nights: Matt Willett | 15th of November | 6:00pm

£95.00

Our chef collaboration series continues, and this time we're handing over the pans to none other than Matt Willett, finalist of MasterChef 2026.

A mathematician by trade, a seriously talented cook by instinct, Matt made his mark on MasterChef with inventive combinations, bold flavours & a wonderfully playful approach to food. Drawing inspiration from Japanese cuisine, classical technique & a healthy appetite for experimentation, his cooking is thoughtful and adventurous.

As a long time friend of Oeno Maris (well, of our fish counter at least!), Matt is no stranger to our obsession with exceptional seafood. And what a menu he's dreamt up.

Taking some of our favourite treasures of the sea, Matt has created a seven-course journey that reflects the best produce of the season at Oeno Maris. Japanese influences are woven into the menu alongside with ideas, ingredients and flavours from all over the world.

Yaki Onigiri with Smoked Eel and Dashi

Balearic Bluefin Tuna, Olive, Jalapeño, Hazelnut

Gambero Rosso Handroll, Green Chilli

Cured Mackerel, Horseradish Ajo Blanco, Toasted Almonds

Scottish Scallop, Walnut Miso, Preserved Winter Citrus

Grilled Loch Duart Scottish Salmon, Kokuto Teriyaki, Koshihikari Rice, Pickles

Buckwheat Custard, Apple, Sourdough Croutons and Pomona Caramel

We'll be gathering around the tables in our intimate subterranean dining room beneath Oeno Maris for a one-night-only tasting experience.

Your ticket includes the full seven-course menu, with a specially curated selection of wines, Japanese sake and beers from the Oeno Maris cellar available to purchase by the glass or bottle throughout the evening.

For those who followed Matt's MasterChef journey, here's your chance to experience his cooking first-hand. For those who didn't, you're in for a rather delicious introduction.
